I have a confession: I live in Florida and I do not like Key Lime anything. Or didn’t, until I came up with this recipe. See, I have a new boyfriend, and he loves Key Lime things. When we were grocery shopping the other day, he gazed longingly at the bag of little limes, and I told him to grab them and I’d come up with a dessert for him. I also bought a 2-pound clam shell of strawberries. I didn’t know about him, but I was about to be in strawberry shortcake heaven. I was even going to hand-whip the cream this time.
And then it hit me: I wasn’t so anti-Key Lime that I wouldn’t ever eat them, was I? I like this guy, so let’s find out. The recipe that follows is what came of my playing with Key Limes and strawberries. It’s decadent, delicious, and melts in your mouth. The limes add another depth to the dessert that sends you to the Moon. He’s even decided it replaces his former-favorite dessert.

- 2 Pounds Strawberries, stemmed and sliced
- 7 Tbsp Granulated Sugar
- 2 Cups All-purpose Flour
- 1 1/2 Cups Milk Almond will work, other nut milks won't
- 2 tsp. Baking powder
- 3/4 tsp Salt
- 1/4 tsp Baking soda
- 8-10 Key Limes
- Whipped Cream (recipe follows)
Heat oven to 400 °F
In a large mixing bowl, sift together flour, baking soda, baking powder, and salt.
Add 5 Tbsp. of sugar, and zest of 6-8 limes.
Stir in milk until it resembles pancake batter.
Pour into square pan.
Bake for 18-20 minutes, or until golden brown and cooked completely through.
Add strawberries to separate mixing bowl
Combine with 2 Tbsp. sugar and the juice from the 6-8 limes zested above.
Cover and keep in fridge.
Make whipped cream.
- 2 Cups Heavy Cream (30%+)
- 2 Tbsp Granulated Sugar
- 1 1/2 tsp Vanilla Extract
Add all ingredients to a mixing bowl, and whisk until soft peaks form (about 8-10 minutes). You can also use a mixer, and it will take 3-ish minutes.
Cover and refrigerate until ready to use. Can be stored for 3-4 days,
If you're making this for the Key Lime Strawberry Shortcakes, zest 2-3 key limes and fold into the whipped cream.
