3 Ingredient No-Bake Almond Butter Oat Squares

I don’t know about you, but I often find myself out and about quite a bit more than I am home during the warm months…when I’m not traveling full-time. Because of that, I would rather bring food with me most of the time, because as we all know, eating out all the time is both unhealthy and expensive. When I got this recipe from an old roommate, it was written for peanut butter. I found myself with an excess of almond butter, and I don’t particularly like almond butter, unless it’s baked into something. So, I modified this recipe to suit the ingredients I had on hand. 

You don’t have to use honey, you can use agave. You don’t have to use almond or peanut butter. As you probably know, there are a wealth of other seed and nut butters that are just as suitable. I made these with tahini once, and they were pretty good. Don’t be afraid to sub in your favorite butter, except butter-butter, because gross.

Plus! These are easy to pop in a container and haul with you all over town. Because of their ingredients, they are protein and energy packed. Enjoy, and let me know if you use a different type of butter!

  1. Line a 9" x 9" (23 cm x 23 cm) pan with foil, and spray with nonstick spray.

  2. Measure oats into a mixing bowl.

  3. Melt almond butter and honey together in a microwave safe vessel, 45 seconds at a time, stirring after each 45 seconds. Once they mix together smoothly, it's time to stop. Usually about 2 1/2 minutes, depending on your microwave's power. Watch it closely. The almond butter burns easily.

  4. Pour mixture into bowl of oats, and fold until all oats are coated.

  5. Pour mixture into the pan, and press down to flatten into the pan.

  6. Refrigerate for about 2 hours.

  7. Remove the foil containing the bars from the pan and place on a cutting board.

  8. Cut into squares.

  9. Put in an airtight container, and keep in the fridge.
